Traditional This is a traditional Angolan recipe for classic stew of mixed vegetables, sweet potatoes and beans cooked with couscous or bulgur wheat in a spiced sauce.

    

  1. 4 small kohlrabies, peeled and cut into chunks
  2. 2 sweet potatoes, peeled and cubed
  3. 1 large onion, chopped
  4. 2 courgettes, chopped
  5. 5 tomatoes, chopped
  6. 1 x 400g tin chickpeas, with liquid
  7. 100g couscous or bulgur wheat
  8. 50g raisins 1 tsp ground coriander
  9. 1/2 tsp ground turmeric
  10. 1/2 tsp ground cinnamon
  11. 1/2 tsp ground ginger
  12. 1/4 tsp ground cumin
  13. 700ml water

    Angolan Vegetable Soup Preparation: Method: Combine all the ingredients in a large saucepan and bring to a boil. Reduce to a simmer, cover and cook for 30 minutes or until all the vegetables are tender. Serve in soup bowls and garnish with coriander.
